Popular demand has led us to provide our 'Niwas staples and resident favorites! Please enjoy with your friends and family.

Kitchari

1 cup mung dhal
1 cup rice (washed)
1 tbsp cumin, coriander, tumeric, mustard seed
4 potatoes (cubed)
1/2 cauliflower (into small florets)
​3 carrots (chopped)



Fry spices for 45 seconds, then mix in vegetables then rice and dhal. Add 9 cups of water, bring to a boil and simmer until Kitchari is desired consistency.  Stir regularly. Garnish with favorite achar and plain, organic yoghurt.

Sabudana

1 cup Sabudena
2 boiled potatoes cubed
½ cup peanuts
2 tsp oil
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp brown sugar
1 green onion
Bunch cilantro
 
​Fry onion and spices, add sugar and peanuts, then add potato and sabudana, garnish with cilantro (unless you are Paramjyoti ;) ).

'Niwas Granola

8 cups organic rolled oats
Couple spoonfuls of organic coconut oil
4 tablespoons uraa dahl
1/2 cup sunflower seeds
2 cups pumpkin seeds
1 cup shredded coconut
2 cups raisins
1 cup dried cranberries
1 cup hemp hearts
1 cup flax seeds

Toast oats in coconut oil in large cast-iron pot. In separate pan/pot, toast uraa dahl, sunflower seeds, pumpkin seeds and shredded coconut. Add into toasted oats. Turn off heat and add in raisins, cranberries, hemp hearts and flax seeds. Serve with sweetener and milk or hot water.
